Shortly after beginning a new adventure in the Fishers
Test Kitchen, entrepreneurial chefs and brothers John
and Kim were forced to halt operations of their
Korean BBQ food concept, Korave, amid
COVID-19 concerns.
“To do our part in trying to flatten the curve, we
decided to shut down down for about three months.
Our biggest concern is the safety of our customers
and staff. But of course, it’s different to go that long
without income,” said John.
Now adjusting to the new normal for the restaurant
industry, Korave is rebounding after their 3 month
leave and are back in the Test Kitchen, serving their
favorites to the Fishers community and Sun King
customers, still promoting the carry out option.
“People are rightfully still cautious about going out
and being around people, so we are still encouraging
customers to order online and use the take out
system. It’s been working out pretty well so far,” said
John.
Born in South Korea, brothers John and Kim originally
relocated to Utah, where they attended culinary school,
eventually opening a food truck there.
“We were a food truck operator for about two years as
Korean BBQ fast casual. We actually started our business
from a summer farmer’s market and tested out our
concept for about a year, then started a food truck,”
noted John.
In 2018, the brothers moved to Indiana where they
continued running the community favorite food truck,
eventually being selected as part of the inaugural class
of chefs at the Fishers Test Kitchen.
“We were really interested in the test kitchen program
because we wanted to be a part of something new and
exciting in our community,” said John, “It was also a
really good option for us because it allowed us to
minimize the typically high risk that comes along with
opening a new restaurant, and it was a really good
opportunity to test out our concept in a brick and mortar
space.”
As Korave seeks to build upon the success they
experienced “pre-lockdown,” they remain thankful for
their customers and continue to develop innovative ways
to better serve them.
“We’re so appreciative of the incredible support from our
community and customers! We’re also planning to offer
late night fresh out of the oven [Fat Stack] cookie pick up
very soon!”

Friday and Saturday 11am – 11pm
